I think Huari shoot anything that gets too close or shoots one of their ships. The Huari seem pretty out of date. Slam cannons, even though still pretty powerful, are old. Howitzers, too. Their designs seem very cubical and stone like, hinting that they have been around for a long time.

Well, upgrading to larger ships could force you to hire more crew members. For example you could buy crew members as a commodity (let's say, a colony station) and a Capital should would have x amount of officers, x amount of crew members,and x amount of engineers. To be honest, CSC's are pretty flat. As most of the ships were designed to be 2D, a lot of the ships are pretty flat. The sung gunships aren't half bad, but their cyberwarfare ship is pretty boring and flat.

There are a couple mod projects trying to do this already, however not many are released. The tutorial system, while better, is no where close to complete, and adding this might make trade harder for beginners, (even though that most beginners go around and shoot pirates for money).

Haven't played this yet, but it looks beautiful. But it seems that there are no shadows from the ships or stations from the screenshot. Looks awesome, though, I can't wait to try it out.

In regards to your jerky turning speed, I think that Player Drones v6 has a pack for 120 facings for all ships.
