We all know you protect freighters as Korolev missions. I think this needs to be expanded somewhat.
I think there should also be the option of transporting the cargo yourself - the more valuable the cargo, the more enemies you have to face and the more money you get for completing the mission.
At the Korolev station, you accept the mission and 25% of your cargo hold is filled with cargo (only 25% to avoid making the freighter unbalanced compared to the other two), and you go to whatever station they tell you to. Along the way you fight pirates, then you dock with the the other station, where you get paid (or maybe you need to go back to the Korolev station).
This would be easier than protecting a freighter, so the pay should be halved, or decreased by 20-40%.

What parts of that mod don't you know how to do?
Work something up. When you get stuck, post questions in the Shipyards Forum. That is what it is there for.
Take a look at the code for the fleet missions, one of them invovles hauling grain. Also, look at the BM mission. The hardest part of transport or escort missions is the opposition, but if you are willing to mod the base xml, that shouldn't be a problem.
