Its hard to pin down when things go wrong with random elements, but...
I'm two systems past St Ks, and I have found:
3x Light Ithalium Armour
Katana Star Cannon
Outboard Light Ion
Koshiba 500
And I think this was all from the same system...
Seems a bit excessive for mid-game drops...
Anyone else seeing things that seem a bit too lucky?
Is anyone else seeing oddness in the loot generation?

I guess you're just lucky. I'm two systems past sanctuary and have yet to find a Koshiba.
Katana's do normally appear a few systems past St Kats, very often the first Bushido vendor has them in stock.
You got to use your luck, before you know it you find yourself looking for items you need and not finding them at all. Getting lots of other stuff you weren't looking for.
I was finding lots of drugs in my last game, but no places to sell them for a profit.
