I am making a mining ship with spider like legs, and a nose-mounted drill. But I want the drill to do damage on contact and mine asteroids. Help with this would be great.

You could have a weapon on your ship (possibly virtual so it can't be removed) with a very high repeating or fire-rate and low range. It could be made to look (or be invisible) and sound like a drill, and have different effects when hitting asteroids, armor, and shields.
You could also set up a repeating event on the ship that checks for the presence of asteroids or enemy ships and creates a weapon fire similar to the above, or even use a combination of the two.

This is a great idea. It would be extremely awesome coupled with the new ship switching possibilities.
Pesonally I've taken a proof-of-concept mod and added all the mod ships I have downloaded into the ship-purchasing screen it provides. It's pretty freaking nifty to be able to upgrade, and to have different ships for different needs. The mining ship you're talking about seems like it would be perfect for just such a thing.

So, I managed a primitive 3D render of the mining ship, but now I'm trying to figure out how to color it in Blender. Or should I just edit the image using something like GIMP to color it in? If anyone has any knowledge of these two programs PLEASE let me know!

What you want to do is UV map and texture the model. In this process the program generates a flat representation of all faces of the model. Which allows you to open the flat image in a image editor and "paint" the 3d object.
Just searching "UV mapping blender" on YouTube will get you some video tutorials for blender. Personally, I've always used Wings3D for my modeling and texturing, so I'm afraid that I can't help with that.
