Also make sure that, when posting, the "Attach signature (signatures can be changed in profile)" checkbox is ticked.

That's not a problem; its on by default. It's that the forum is set not to allow quotes in signatures it seems...

I do not know if it is set to not allow quotes in signatures, it just made sense to me that it was implemented like that (I could see myself making that choice as a developer)

I think it is. That's the only thing that would makes sense. It would be a setting though.
